I love marzipan! Marzipan does not love me … But this breakfast/supper creation, based on Sarah Wilson’s ‘Cashewy Chia Puddings’ satisfies my desires:
Ingredients (for two puddings):
- Generous 1/2 cup white chia seeds
- 1 tablespoon almond meal (or ground almonds)
- 1 teaspoon powdered Stevia
- 1 teaspoon almond essence
- 300mls almond milk
- Whisk together the ingredients until the mixture froths.
- Divide into two bowls.
- Refrigerate until set (overnight if possible).
