‘Marzipan’ Chia Pudding


love marzipan!  Marzipan does not love me …  But this breakfast/supper creation, based on Sarah Wilson’s ‘Cashewy Chia Puddings’ satisfies my desires:

Ingredients (for two puddings):

  • Generous 1/2 cup white chia seeds
  • 1 tablespoon almond meal (or ground almonds)
  • 1 teaspoon powdered Stevia
  • 1 teaspoon almond essence
  • 300mls almond milk


  1. Whisk together the ingredients until the mixture froths.
  2. Divide into two bowls.
  3. Refrigerate until set (overnight if possible).
