Homemade Granola


This is my take on Sarah Wilson’s ‘Coconutty Granola’ from I Quit Sugar.  Sarah’s recipe offers lots of ingredient options and this is the mix that I’ve settled on.

Ingredients (all measurements are approximate):

  • 3 cups coconut flakes
  • 1 cup flaked almonds
  • 1 cup pumpkin seeds
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 100g melted butter


  1. Preheat the oven to 150C.
  2. Combine all ingredients in a large oven-proof dish.  You want a shallow layer of the mix rather than a deep one so that everything gets toasted.
  3. Pop it in the oven for about 20 minutes.
  4. Allow to cool, and serve with milk and, if you want, sweetener.
  5. Store in the fridge.
